The Moment You Wait for..

5 of my favorite things this weekend.

1. Chapman State Park.In case you haven't noticed, I am a HUGE fan of our area and have started to utilize it to the fullest. I have been hiking at Chapman State Park for two years and I love it more every time. (It also helps that the Park is 5 miles from our home.) There are over 12 miles of trails within the Park, and Chapman also serves as a trail head for several other trails in the Allegheny National Forest. Over the past couple of years, the campground has been refurbished and now has hot showers and dressing areas. There are two yurts and three rustic cabins available for rental or you can bring your own set-up. For those looking for more privacy, there are also primitive camping sites that you have to hike to.

2. Mango Fruit. Tonight I made black bean burgers from scratch. They were pretty good, but next time I will put some of my own flair in - they seemed a bit dry/slightly bland. Anyway, the recipe included a mango salsa (probably because the burgers are dry..) The salsa was delicious and while I was Google-ing I found another recipe for grilled salmon with mango salsa.

3. Almond Milk. Another change that I have made on my nutrition plan is to switch from skim milk to almond milk. It is so smooth and rich. Almond milk is non-dairy, so if you are lactose intolerant you should try this option.

4. The first day of Spring. It's kind of an oxymoron here in Northwestern Pennsylvania to have the first day of Spring in the calendar month of March. As I am typing this, I am listening to freezing rain pelt my windows. Alas, there is something about the word 'Spring' printed on the calendar - sort of like a contract with Mother Nature in black and white.

5. Burt's Bees Peppermint Foot Lotion. "Make your toes tingle" so says the description. Burt's Bees products are 100% natural, packaged in environmentally friendly packaging, and they darn well work! The Peppermint Foot Lotion does just what it says - tingles your toes. Sort of like a Peppermint Patty for your feet.
